1. Harvest: The process begins with the harvest of the blue agave plants in the Diamante Negro fields, typically aged between 5-7 years, located mainly in the Amatitan region of Jalisco, Mexico. The heart of the agave, known as the piña, is harvested by specialized workers called “jimadores.” It is then transported to our distillery, Del Carmen.
2. Cooking: The piñas are cooked to convert complex carbohydrates into fermentable sugars. This is done in the masonry oven at our factory.
3. Milling: After cooking, the piñas are crushed to extract the agave juice, known as “mosto.”
4. Fermentation: The extracted juice is placed in fermentation tanks, where yeast is added. The yeast consumes the sugars and converts them into alcohol, a process that usually takes several days.
5. Distillation: The fermented liquid is distilled, typically twice, in pot stills. The first distillation (destrozamiento) produces a low-alcohol liquid, while the second distillation (rectificación) increases the alcohol content and refines the flavors.
6. Bottling: After distillation, the tequila is filtered and may be diluted with water to achieve the desired alcohol content (usually around 40% ABV). It is then bottled to preserve its fresh and vibrant flavors.
